What's Cooking in our Kitchen

Hello! So, I was alluded to in the welcome post. I'm the "great husband that loves to cook." Honestly I think she was trying to type something other than "great" there, but it auto-corrected, but I do love to cook!
I don't plan on taking up a lot of real estate on the blog. I wouldn't even know what all I have to share, honestly. Jessamyn covered most of our mutual interests, but where my personal interests diverge is that I'm a bit of a horror movie/TV show buff, a huge Power Ranger nerd, and a Trekkie. So, if I have thoughts to spill about anything on those ends, I'll probably drop it here. I'm also a microbiologist and actually went to graduate school for philosophy...so I might have a lot to say about a lot of different areas. ;p
Primarily, I thought it might be nice/fun to have a place to talk about the stuff I do in the kitchen. As mentioned previously, we've been on a weight-loss journey for a bit. I started in late September 2023 and Jessamyn started in early December 2023 (I think, it may have been early January), and we've had mild-to-moderate success. I've dropped 85-90 pounds and she's about 50 pounds down from her original start as well (and she doesn't mind that I share that.)
One of the things that's helped us be successful is doing 90% of our meals here at home. Not that long ago, it wasn't uncommon for us to eat out, at least, every meal from dinner on Friday to dinner on Sunday. Which, honestly, that's perfectly reasonable when you're a busy parent, working all week, and trying to fit in fun family-time stuff on the weekends and you're never really at home long enough.
However, with "inflation" being what it is (I know that there is some amount of it that's actually inflation, but when companies are raking in record profits while bemoaning having to raise prices at the same time...how much is it really inflation?) and being on this weight loss journey, it just makes better sense to eat at home. I don't think I make anything super special or fancy. I just try my best to make meals that are decent on the calorie counts, help us hit our macros, and try to cut down on as much food waste as possible.
I'll definitely share the recipes of the stuff I love to make or stuff that I know people really like. I plan on sharing any new thing or experiment I do in the kitchen to either try a new recipe or put a new twist on something. I may also do a post or video or something about how I make a grocery list or how I plan to feed a family of four with three picky eaters, two kids, and vastly different tastes and likes. We'll just have to see.
But, yeah, I'll hang out around here some, too. Feel free to say "Hi."
